Key Responsibilities: Create and prepare a diverse sushi menu using fresh ingredients and raw fish (e.g. salmon, tuna, unagi) ?? Prepare appetisers, soups, and salads aligned with traditional Japanese cuisine ?? Lead and manage kitchen staff in the absence of the Head Chef ???? Work closely with service staff to accommodate special requests and dietary needs ? Guide and train junior kitchen staff in food preparation and plating ???? Supervise presentation to ensure high standards and consistency ? Oversee kitchen stock quality control, rotation, and efficient use ? Support efforts to reduce waste and manage the kitchen budget wisely ?? Collaborate with the Head Chef to maintain organisation and identify training opportunities ?? Maintain strict hygiene, health, and safety standards at all times ?? Requirements: Matric; culinary diploma preferred ? Minimum 4 years’ experience in a senior chef role ?? Proven experience as a Sushi Chef or in an Asian cuisine kitchen ? Strong knowledge of sushi varieties and rolling techniques ? Valid drivers licence and reliable transport ?
