About the Role
We are seeking an experienced and classically trained Head Chef to join a premier wildlife lodge in the Eastern Cape. As the culinary leader, you will be responsible for elevating every aspect of the dining experience, crafting menus that reflect the spirit of the destination, its seasons, and the stories of the land.
Key Responsibilities
- Craft menus that showcase local ingredients and seasonal produce
- Collaborate with local producers and suppliers to source fresh, regionally sourced ingredients
- Lead and mentor a dedicated kitchen team to consistently deliver high-quality dishes
- Take full ownership of kitchen administration, including food costing, stock control, and procurement
- Ensure efficient and profitable operations without compromising quality
Requirements
- Formal culinary qualification (diploma or degree) from a recognised institution
- A minimum of six years’ experience in a Head Chef capacity within a fine dining environment
- Prior experience working in a safari lodge, game reserve, or upmarket boutique hotel is essential
- Demonstrable leadership ability with a genuine commitment to mentoring and developing kitchen staff
- Passion for training and growing teams, with the ability to inspire a culture of excellence
