About the Role

As a Junior Sous Chef at Craven Cottage CC, you will be responsible for leading and managing our junior kitchen staff while providing guidance on line cooking, food preparation, and dish plating. You will also oversee kitchen stock and ingredients, ensuring a first-in, first-out system and verifying food product dates for quality assurance.

Key Responsibilities

  • Manage and lead the junior kitchen staff
  • Provide guidance to junior kitchen staff members on line cooking, food preparation, and dish plating
  • Oversee and organize kitchen stock and ingredients
  • Ensure a first-in, first-out food rotation system and verify all food products are correctly dated for quality assurance
  • Keep cooking stations stocked, especially before and during prime operation hours
  • Train and assess staff on the job
  • Manage food and product ordering by keeping detailed records and minimizing waste
  • Supervise all food preparation and presentation to ensure quality and restaurant standards
  • Work with the Head Chef to maintain kitchen organization, staff ability, and training opportunities
  • Assist the Head Chef with menu creation
  • Monitor and maintain health and safety
  • Maintain staff and leave rosters
  • Ensure that all CDPs are familiar with the weekly and daily reservations, events, and menu requirements
  • Ensure each dish leaving the kitchen is checked for quality, quantity, presentation, and correct temperature.

Requirements

  • Grade 12
  • Culinary Diploma
  • At least 3 years previous experience as a Junior Sous Chef role at a 5* lodge
  • Leadership and management skills
  • Able to work in a team
  • Basic computer skills (word, excel, outlook)
  • Excellent written & oral communication skills
