This position is based in the Cape Winelands. Due to the operational nature of the role, applicants must reside within a reasonable commuting distance of the property. Suitable locations include the Cape Winelands (Stellenbosch, Paarl, Franschhoek and surrounding areas) or the far Northern Suburbs of Cape Town (such as Durbanville, Brackenfell, Kraaifontein and nearby areas). Reporting to the Finance team, the Food & Beverage Cost Controller will play a critical role in protecting the profitability and financial integrity of the hotel’s Food & Beverage operations. You will oversee stock control processes, procurement compliance, inventory management, supplier invoice verification, cost reporting and menu costing, while partnering closely with the Executive Chef and Food & Beverage leadership team to identify opportunities to improve margins and operational efficiencies. Your responsibilities will include: Managing procurement controls, purchase order verification and three-way matching of purchase orders, delivery notes and supplier invoices. Ensuring the accurate receipt, reconciliation and recording of all Food & Beverage stock. Conducting weekly beverage stock counts and monthly inventory counts across all outlets and storage areas. Investigating stock variances, wastage, spoilage, shrinkage and supplier discrepancies. Preparing daily, weekly and monthly Food & Beverage cost reports and analysing cost trends. Monitoring supplier pricing and ensuring compliance with negotiated agreements. Maintaining recipe costing and supporting menu engineering initiatives to maximise profitability. Partnering with operational teams to improve cost efficiencies and strengthen internal controls. Supporting budgeting, forecasting, audit requirements and year-end stock processes. Ensuring compliance with company policies, procurement procedures and financial controls. To be successful in this role you should have: 23 years’ experience in an F&B Cost Control, Hospitality Finance, Procurement or similar role. Previous experience within the hospitality industry (hotel, lodge, resort or luxury hospitality environment preferred). Strong financial and analytical skills with exceptional attention to detail. Advanced Microsoft Excel skills. Sound understanding of inventory management, stock control principles and cost of sales. Experience working with POS systems such as Micros or similar. Excellent organisational and problem-solving abilities. The ability to build strong relationships across Finance and Operations. The following criteria are advantageous and will give your application a competitive edge : Qualification in Hospitality, Finance, Accounting or Supply Chain. Experience using hotel accounting systems and Hotel Management Systems (HMS). Knowledge of recipe costing and menu engineering. Food Safety and/or Health & Safety certification. Previous experience within a luxury hospitality environment. Ideally my client is looking for an individual who is: Commercially minded and highly analytical.
