Afrikaans & English-speaking Gr.12; 5+ years exp as a qualified/experienced/passionate Retail/Full Service Butcher. Must have excellent knife skills/meat cutting techniques/knowledge of meat cuts/trimming/ portion control/Q.C./Food Safety/ Hygiene/ HACCP/SHE principles. Must take pride in his workmanship/have good communication/teamwork skills/be reliable/honest/able to work under pressure/willing to work public holidays/weekends when required. Must be able to develop/implement/control systems/SOPs/ perform professional cutting/ trimming/ boning/portioning of meat/prepare/process a wide variety of fresh cuts/ value-added meats/ beef/lamb/pork/chicken/processed meat products. Must operate/maintain butchery equipment safely/efficiently/work effectively within a team/maintain productivity/quality standards. Must produce retail-ready/meat products/ensure excellent product presentation/display standards / maintain high standards of hygiene/food safety/excellent customer service/product advice/monitor stock rotation/minimise waste/assist with stock control/receiving/quality inspections. Must train/delegate/discipline staff/conduct performance evaluations/keep to budgets/do RCA of non-conformances/implement CA/PA/ write management reports/attend regular mngt meetings. Report to CEO.
