About the Role
HotelJobs is seeking a skilled Pastry Chef de Partie to join our luxury lodge team in Hermanus. As part of our nature reserve, we offer a unique opportunity to work in an idyllic setting while providing exceptional dining experiences for our guests.
Key Responsibilities
- Prepare and bake bread loaves and rolls, including specialty breads, cakes, biscuits, desserts, and pastry goods as well as hot box snacks and tea-time treats.
- Check the quality of raw materials and weigh ingredients.
- Coordinate the forming, loading, baking, unloading, de-panning, and cooling of batches of bread, rolls, desserts, and pastry products, as well as hot box snacks.
- Maintain portion control to ensure minimum wastage.
- Perform regular stock takes in conjunction with the main kitchen.
- Ensure all pastry kitchen monthly and daily administration is completed accurately and timeously.
- Enforce hygiene regulations and Health and Safety skills in the pastry kitchen.
Requirements
- Completed undergraduate degree in culinary arts or attended a bakery school.
- 3 – 5 years working experience in a 4/5-star hotel/lodge environment.
- Pastry section experience is required.
- Knowledge of assessing inventory and supplies.
- Maintaining safe and sanitary working conditions.
- Ability to multitask and work efficiently under pressure.
- Good management skills.
- Knowledgeable of all dietary requirements.
Qualifications
- Bachelor’s degree in culinary arts or related field.
Salary & Benefits
R 12,000 – R 18,000 pm DOE
