About the Role

Live-in accommodation provided, we are seeking an experienced Sous Chef to support the Head Chef in delivering exceptional culinary experiences at our luxury safari lodge in the North West. As a key member of our kitchen team, you will play a vital role in ensuring high standards across all kitchen operations and contributing to outstanding guest experiences.

Key Responsibilities

  • Assist the Head Chef in daily kitchen operations and menu preparation.
  • Supervise, train, and mentor junior kitchen staff, including Chef de Partie and Commis Chefs.
  • Ensure all dishes are prepared according to recipes, portion sizes, and presentation standards.
  • Maintain high standards of food hygiene, health, and safety.
  • Monitor stock levels, manage kitchen supplies, and minimise food waste.
  • Assist in creating seasonal menu items and special event menus.
  • Delegate tasks effectively to ensure smooth operation during busy periods.
  • Support the Head Chef with administrative tasks, including ordering, inventory, and staff scheduling.
  • Maintain discipline, professionalism, and teamwork within the kitchen.

Requirements

  • Proven experience as a Sous Chef in a luxury lodge, hotel, or fine dining environment.
  • Strong culinary skills and technical knowledge across all areas of the kitchen.
  • Leadership and mentoring abilities for junior kitchen staff.
  • Knowledge of food safety, hygiene, and stock management.
  • Ability to work under pressure, independently, and as part of a team.
  • Flexibility to work shifts, weekends, and holidays.

  • Proven experience in a similar role (see Requirements).

Salary & Benefits

Salary: R12,000 per month. Live-in accommodation provided for the successful candidate.
