About the Role
A skilled Pastry Chef de Partie is sought after to manage the pastry section of a luxury lodge in Gansbaai, contributing to exceptional dining experiences. The ideal candidate will possess strong technical skills, creativity, and the ability to maintain high standards in a private nature reserve environment.
Key Responsibilities
- Manage and oversee the pastry section of the kitchen
- Prepare pastries, desserts, and baked goods to the highest standard
- Ensure all mise-en-place is freshly prepared and available on time
- Maintain consistency in taste, portion size, and presentation
- Supervise and mentor junior pastry staff, providing guidance and training
- Ensure the pastry section is clean, organised, and compliant with hygiene standards
- Collaborate with Sous Chefs and Head Chefs to plan seasonal menus and new creations
- Monitor ingredient stock levels and communicate any shortages promptly
- Assist with special events, private dining, and dietary requests as required
- Maintain discipline and professionalism within the team
Requirements
- Proven experience as a Pastry Chef de Partie in a luxury hotel, lodge, or fine dining environment
- Strong technical skills in pastry, desserts, and baked goods
- Creativity and keen attention to detail
- Leadership and mentoring skills for junior staff
- Knowledge of food safety, hygiene, and stock management
- Ability to work under pressure, independently, and as part of a team
- Flexibility to work shifts, weekends, and holidays
