Hospitality and Outdoor New Vacancy Head Chef Luxury Lodge – Madikwe, North West Requirements At least 3 years experience in a similar position Essential Luxury lodge experience-Preferred Professional cookery diploma or similar advantageous Ability to produce innovate and modern dishes to the highest of standards Ability to be flexible and adaptable Excellent understanding of kitchen procedures and timing requirements Excellent planning and organisational skills Good interpersonal and communication skills (verbal and written) Working knowledge of Health, Safety and hygiene practices Able to collaborate and work positively as part of a team Able to act decisively and quickly when necessary Good judgement in all situations Professional and presentable Creative problem solver Honest and reliable Basic administrative skills Description Supervision and training of kitchen brigade. Preparation and presentation of food in line with the company standard of excellence. Guest interaction to enrich guest satisfaction and experience. Administration of orders, invoicing & stock control to minimize shortages and wastage. Ensure regular stock takes are done, stock levels monitored and food orders are done timeously. Maintaining fridges and stores and maintaining stock rotation standards. Ensuring that the cleanliness and hygiene of the kitchen is of the highest standard. Correct use and maintenance of kitchen equipment. Communication with kitchen and lodge front of house team to ensure the smooth running of the department. Actively contribute to the companys sustainability practices. Ensure your team is aware of guest allergies and dietary requirements to eliminate risk of cross contamination and harm to guests. To ensure the efficient, effective and professional coordination of tasks within the guest service department to ensure a pleasant and problem-free guest experience. To ensure all members of your team adhere to the Health & Safety Protocols in place regarding the SOP (Standard Operating Procedure) in order to ensure the safety of both your team and our guests. To be readily available at all times to deal with any matters / problems arising which may require your attention or reporting matters to your superiors timeously if the need arises. Ensure that lodge service standards and guest experiences are met, maintained and exceeded consistently. Ensure that complaints, comments or problems are actioned without delay and that effective follow-up action takes place to avoid a recurrence. Report matters of this nature to your superiors for assistance and guidance as needed. To ensure that you and your team are familiar with all local emergency services and procedures. To effectively communicate tasks, daily schedules and special arrangements pertaining to guest relations, to your team and ensure you undertake and/or coordinate the necessary procedures to ensure smooth operations and timeous action. Ensure you familiarise yourself with arrival / departure schedules for guests and aware of all dietary / allergy information. You will be required to report any matters arising in the Kitchen and FOH Service department which may require senior managements attention. To work with your superiors to ensure that training is implemented and maintained. Any reasonable task, within your capability, as requested by your superiors.
