About the Role
We are seeking an experienced and passionate Executive Chef to join our luxury boutique hotel in the KZN Midlands region. As a Fine Dining Executive Chef, you will be responsible for creating exquisite menus, leading a team of culinary professionals, and ensuring that every dish that leaves our kitchen meets our high standards. Key Responsibilities
- Ensure that all company policies, procedures and standard operating processes are adhered to
- Efficiently run the kitchen
- Prepare, cook & prepare all meals according to company standards (quality, quantity & safety)
- Work towards exceeding customers’ expectations by promoting high levels of service
- Regularly update menus to ensure freshness, seasonal appropriateness & reflection of global trends
- Ensure work areas are kept clean
- Serve dishes at correct quality, portion size & temperature
- Properly arrange & garnish food
- Responsible for the preparation of kitchen cleaning rosters & supervision of cleaning schedules
- Staff management & guidance
- Hold daily meetings with team to ensure handovers are effective & all kitchen issues are addressed
- Manage weekly training sessions for all staff members
- Promote good team spirit
- Ensure all kitchen staff consistently adhere to uniform, grooming and health & safety standards as per HACCP
- Proactively share knowledge with staff
- Timeous submission of daily, weekly & monthly reports as required
- Conduct performance reviews
- Effectively communicate with other departments to ensure the guest experience is enhanced
Requirements
- Minimum 4 to 5 years experience as an Executive Chef in a 5* hotel or boutique property environment
- Culinary diploma
- Food Portfolio
