Job Description

A well-established hotel in Cape Town is seeking an experienced Executive Sous Chef to support the Executive Chef in leading a large, high-output kitchen operation delivering 5-star standards . This role is ideal for a senior culinary professional with proven experience managing big kitchen brigades , maintaining consistency at scale, and upholding excellence in a fast-paced hotel environment. This is a hands-on leadership role requiring strong technical skill, operational discipline, and the ability to drive quality across all kitchen sections. Candidate Requirements (Essential) Applicants must demonstrate: Proven experience as an Executive Sous Chef or Senior Sous Chef within 4- or 5-star hotels Extensive experience in large hotel kitchens delivering 5-star standards Proven leadership of large kitchen brigades Strong ability to manage high-volume production without compromising quality Excellent knowledge of food safety, hygiene, and HACCP compliance Experience across multiple kitchen sections and service styles Willingness to work shifts , including weekends and public holidays South African ID Matric (Grade 12) Relevant Professional Cookery / Culinary qualification Key Responsibilities Support the Executive Chef in managing the day-to-day kitchen operation Ensure all food produced and presented consistently delivers 5-star standards Lead, train, and motivate large kitchen teams, ensuring discipline and structure Oversee service periods, production flow, and quality control across all sections Assist with menu planning, execution, and kitchen organisation Manage stock control, ordering, and cost awareness Enforce strict hygiene, safety, and food handling standards Take full responsibility for kitchen operations in the absence of the Executive Chef Drive continuous improvement in food quality, consistency, and team performance Leadership Profile Hands-on, authoritative kitchen leader Calm under pressure during high-volume service Detail-driven with strong organisational skills Committed to excellence and 5-star delivery at scale This role is suited to a senior hotel kitchen professional with a proven ability to deliver 5-star standards in large, demanding operations.
