is assisting a Luxury Safari Lodge near Hoedspruit to recruit a skilled and service driven This is an exciting opportunity for a strong kitchen leader with both technical finesse and a coaching mindset, who can thrive in a high-volume, high-standard à la carte and buffet environment. Working alongside the Executive Chef, the Head Chef will take the lead in executing daily kitchen operations, overseeing multiple dining outlets, and ensuring a seamless culinary experience for up to 165 guests. From outdoor functions to à la carte service and buffets, the role requires a calm, detail-oriented professional who can manage both performance and people with poise. Lead and manage day-to-day kitchen operations in collaboration with the Executive Chef. Oversee food preparation, quality checks, and final plating before dishes reach guests. Maintain cleanliness, stock rotation, and health & safety standards across all kitchen areas. Manage procurement, stock control, invoicing, and monthly reporting. Drive team discipline, upskilling, and morale – acting as a teacher and coach within the kitchen. Handle guest dietary requirements and special requests with care and creativity. Coordinate set-up and execution for à la carte service, buffets, and outdoor dining functions. Ensure smooth kitchen pass management across hot, cold, and pastry sections. Supervise scullery, cleaning schedules, and maintenance of kitchen equipment. Minimum 4–5 years in a similar Head Chef or Senior Sous Chef role in a lodge or resort environment. Strong à la carte experience for high volume service (165 pax), including buffet and function service. Excellent kitchen administration, recipe knowledge, stock control, and reporting. Calm under pressure, highly detail-oriented, and passionate about coaching and team growth.
