About the Role
Kendrick Recruitment is seeking a skilled and creative Senior Sous Chef for a 5-star boutique hotel in Johannesburg, home to an award-winning restaurant known for its heritage-inspired dining and elevated culinary experience. Key Responsibilities
- Assist the Head Chef with menu planning, seasonal dishes, tasting menus, and heritage-aligned cuisine
- Lead kitchen operations in the Head Chef’s absence and ensure consistent excellence
- Supervise food preparation, plating, service timing, and quality control
- Manage food costs, stock rotation, procurement, portion control, and wastage reduction
- Maintain hygiene, safety, kitchen organisation, equipment upkeep, and compliance with regulations
- Mentor and develop junior kitchen staff and assist with roster and shift planning
Requirements
- Recognised culinary qualification (Diploma or equivalent)
- 35 years relevant experience – must be in a fine-dining or luxury boutique hotel environment – essential
- Excellent knowledge of food preparation, plating standards, international cuisine, and dietary considerations
- Strong leadership, training, and people management skills
- Able to remain calm and consistent in a fast-paced premium kitchen
Qualifications
- Recognised culinary qualification (Diploma or equivalent)
Salary & Benefits
R22,000 – R22,000 NEG, dependent on experience
