This prominant award winning wine estate restaurant in Stellenbosch is a regular recipient on the Trip Advisors Top 10 Peoples Choice Awards. Offering an extensive and eclectic a la carte menu for lunch and dinner, the cuisine is decribed as “modern & intricate fine dining”, the decor and interior design distinctly “cool & ultra-chic” while the atmosphere “fresh & super trendy” The brigade of 14 chefs create delectable artisan style dishes that feature on the a la carte menu or the 3 or 5 course tasting menu option. This beautiful 86 seater restaurant incorporates a large outside terrace and relaxed seating area for pre-drinks or relaxing sun-downer cocktails with stunning views across the Stellenbosch Mountains and Table Mountain in the distance. ProStaffSelect are in search of a young and energetic SENIOR SOUS CHEF with the capacity to support the head chef in this demanding kitchen offering very high culinary standards yet able to send out the quality expected over a busy lunch or dinner service. The suitable applicant will need to have come from a fine dining envornment to achieve similar cuisine standards and level of creativity. Responsibilities Manage, direct and control all aspects of food preparation, production and culinary standards Compile, create and implement new menus as required at least twice a year Plan and control orders, equipment and ingredients, receiving and storage Manage, monitor and train all staff for kitchen hygiene, food preparation methods and kitchen practices Be fully in charge of all hiring, managing and training of staff including scheduling, assessment, training, discipline of staff and motivation of the team Take on additional sustainability projects and make use of kitchen garden produce as well as foster good relations with suppliers for preferred cost benefits Ensure ongoing culinary production consistency and standards with optimal use of staff resources Control up-to-date & highest levels of cleanliness of kitchen equipment as well as maintenance thereof Short-term and long-term planning in consultation with the General Manager
