A highly skilled Sushi Chef is sought for this Japanese restaurant. Ultimately, you will help establish the reputation of this restaurant as one of the best Japanese restaurants in the area. RESPONSIBILTIES: Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine Creating & preparing a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi) Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine Manage and lead the kitchen staff in head chef’s absence Coordinate with the wait staff to ensure proper cooking, considering special requests and food allergies Provide guidance & training to junior kitchen staff members, including but not limited, to line cooking, food preparation and dish plating Supervise all food preparation and presentation to ensure quality and restaurant standards Oversee and organizes kitchen stock and ingredients, including proper dating and quality assurance Improve waste reduction and manage budgetary concerns Work with head chef to maintain kitchen organization, staff ability and training opportunities Monitor and maintain hygiene and health and safety principles REQUIREMENTS: Matric, Culinary Diploma preferred Preferably /- 4 years previous experience in a senior chef role Work experience as a Sushi Chef or at an Asian restaurant Good knowledge of various sushi types and sushi-rolling techniques Own transport with valid driver’s license Ability to work both fast and accurately Leadership and management skills Able to work in a team Basic computer skills (MS Word, Excel, Outlook) Exceptional customer-service skills Excellent written & oral communication skills Strong organizational skills Attention to detail Availability to work within opening hours (e.g. evenings, public holidays, weekends) Ability to work under pressure Creative problem-solving skills
