The Boma Dinner is a special highlight — outdoor, around fire, often with a “braai” (barbecue) style set up. South African Cuisine – with luxury gourmet twist – special dietary requirements – Presents and introduces new meal ideas – Responsible for food & beverage management – purchasing, hygiene, stock management – Optimal use of food stocks (compliance with budget targets) – Responsible for the cleanliness of the kitchen Requirements – At least 5 years of experience as Head Chef in a comparable position at a 5-star level – Familiar with the requirements of HACCP standards – Puts the wishes of the guests first and is ready to go the extra mile – Honest personality with integrity who likes to work in a team – No hierarchical thinking – Willingness to help out in other areas of the Lodge in exceptional situations – Annual Bonus based on company results and individual performance – ZAR 1,600 contribution to Private Health Insurance (after probation period of 3 months) – Pension Plan with 7.5% company contribution of fix salary (after probation period of 3 months) – Accommodation (own room & bathroom) – Gratuities – Uniform – Meals – Free wifi – Working cycle: 6 weeks of continuous work / 2 weeks off, 10 days of annual leave
