A large luxury game lodge located within a well-known Big 5 reserve is seeking a passionate and purpose-driven Assistant Food & Beverage Manager to join their management team. This position is ideal for a hands-on, motivated individual who thrives in a high-end hospitality environment and takes pride in delivering exceptional guest experiences while supporting operational excellence. / Clear criminal record; Excellent English communication skills, both written and verbal; Excellent employment track record – references will be checked; Hospitality experience as a Restaurant Manager or Assistant F&B Manager – preferably within a busy lodge environment; Relevant certifications or a degree in hospitality management or related field; Expertise in food service and food & beverage management; Experience in providing training to staff; Proficiency in beverage costing, cost control and budgeting; Excellent knowledge of food and beverages including cocktails, wines and spirits; Highly presentable with excellent communication skills and balanced emotional intellect; Valid driver’s licence and reliable vehicle – advantage Strong customer service and guest contact skills; Excellent leadership and communication skills; Ability to work efficiently in a dynamic on-site role, Excellent understanding of the latest food and drinks trends and concepts, Finer attention to detail and maintaining a guest centric approach in everything, Ability to drive change and to look for operational efficiencies / synergies. Managing the F&B footprint in its entirety which includes all restaurant, bars, room service and conferencing & events operations; Leading the team to deliver outstanding guest and staff service experiences and performance; Managing the F&B budget and achieving operational profitability by driving sales targets and managing costs; Maintain or improve the established standards of food hygiene, cleaning, and food handling to ensure impeccable quality within the outlets for compliance with regulations; Manage supplier relations to ensure consistent timely delivery of fresh quality ingredients; Ensure that stock ordering, receiving, stock takes and requisitions procedures are strictly followed according to par levels and company standards for better accuracy; Having a strong ability and willingness to train, mentor, develop and continually improve the kitchen brigade. Performance management and discipline of staff. / / Salary of R20, 000.00 per month, potentially a bit further negotiable DOE; Onsite single accommodation – to be furnished by the successful candidate; 2 meals per day, when on cycle/duty; Gratuities: Potential eligibility, to be confirmed at interview level; Uniform Work cycle: 21 days on, 7 days off per month.
