Job Description

Our clients are looking for the Head Chef`s second in command/Assistant, responsible for planning and managing food preparation in the kitchen. Perform a variety of duties including but not limited to planning menus, assisting in training new kitchen staff and recording stock.

You will be responsible for:

• Helping in the preparation and design of all food and drink menus
• Producing high-quality plates both design and taste-wise
• Ensuring that the kitchen operates in a timely way that meets our quality standards
• Filling in for the Head Chef in planning and directing food preparation when necessary
• Resourcefully solve any issues that arise and seize control of any problematic situation
• Assisting in Managing and training kitchen staff, establishing working schedule and assessing staff`s performance
• Ordering supplies to stock inventory appropriately
• Complying with and enforcing sanitation regulations and safety standards
• Maintain a positive and professional approach with co-workers and guests
• Provide support to junior kitchen employees with various tasks including line cooking, food preparation, and dish plating, and assist in training junior cook
• Understanding of various cooking methods, ingredients, equipment, and procedures
• Maintaining an excellent record of kitchen and staff management

Qualifications

• Matric
• Culinary/Food preparation qualifications

Skills

The successful candidate must have:

• Minimum 3 years working experience as a Sous Chef

  5-star game lodge fine dining experience

• Accuracy and speed in handling emergency situations and providing solutions
• Familiar with the industry`s best practices
• Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
• Strong organizational skills
• Attention to detail
• Knowledge of kitchen/restaurant regulations
• Leadership ability

Salary/Package

R12 000 – R15 000 basic salary per month commensurate with experience
