ProStaffSelect are in search of a highly skilled and talented HEAD PASTRY CHEF to manage this highly skilled pastry department. Pastry production includes daily baked breads & pastries, speciality morning and afternoon tea treats, sophisticated competition standard plated desserts for dinner as well as Amuse Bouche portion size desserts for wine tasting, function canapes and private event desserts. Chocolate work appears regularly for the HIGH TEA menu & decorated cakes, and is a daily demand for pralines, truffles etc for VIP guest arrivals. The dessert menu items are changed regularly, requiring innovative ideas with a range of hot and cold desserts. REQUIREMENTS : 2 or 3 year recognized professional pastry / culinary qualification At least 5 years industry experience within 5-star hotel or Fine Dining / AWARD WINNING establishments Extensive range of experience in BAKING, PATISSERIE, CHOCOLATE WORK and CONFECTIONERY Previous experience in effective food cost controls Management ability & skill in leading a pastry team of 5 (CDP’s & DEMI’s or 1 Trainee) Strong outgoing personality with exceptional people skills to liaise directly with guests Highly proficient in communicating, motivating, leading and directing others Comfortable creating new desserts on a monthly basis Strong organizational, planning and administration skills Multi-tasker, creative and innovative thinker who’s willing to lead by example Strengths in Stock Controls, Recipe Development & Costing, Budgeting and Finances Strong computer proficiency in Point of Sale Systems as well as Word & Excel
