Job Description

About the Role

We are seeking a skilled and driven Junior Sous Chef to join our luxury lodge in KwaZulu-Natal. As a key member of our culinary team, you will be responsible for ensuring the highest health, safety, and hygiene standards are maintained at all times, while also providing world-class hospitality to our guests.

Key Responsibilities

  • Ensure correct usage of cleaning chemicals and adequate availability of cleaning materials
  • Adhere to approved menus and food styling guidelines
  • Work closely with the training chef during lodge visits and be open to feedback
  • Support the Executive Chef with the implementation of internal chef training programmes
  • Maintain quality and quantity control of all food leaving the kitchen, including snacks for activities
  • Manage bush banqueting, drink stops, and picnics with the use of checklists
  • Proactive maintenance of all food preparation areas
  • Implement effective stock control and stock rotation procedures
  • Maintain strong interaction with guests and fellow chefs, encouraging feedback and idea sharing
  • Lead by example through fair discipline, professionalism, and positive teamwork
  • Be approachable, flexible, and able to work independently
  • Manage special dietary requirements and ensure guest needs are discussed prior to service
  • Ensure emergency food supplies are maintained
  • Report operational issues to management
  • Manage food costs and maintain budget awareness
  • Daily leftover management and minimising waste
  • Assist with food orders
  • Ensure fridges, freezers, and storerooms are clean, secure, and key control is practised
  • Oversee and lead the pastry section

  • Excellent organisational and time-management skills
  • Ability to think laterally and problem-solve
  • Sound HACCP knowledge
  • Knowledge of kitchen management systems (advantageous)

  • Strong mentoring and staff training abilities
  • Excellent pastry skills with experience in producing high-quality desserts
