Job Description

Role Purpose The Kitchen Lead is responsible for running the kitchen as a disciplined, efficient operating system. This role ensures process compliance, food safety, cost control, and team coordination, while maintaining calm, consistent service standards. Key Responsibilities Kitchen Operations & Process Control • Implement and enforce SOPs • Maintain prep lists, cleaning schedules, and checklists • Ensure recipe consistency, portion control, and workflow efficiency • Identify and correct process breakdowns Health, Safety & Compliance • Enforce food safety and hygiene standards • Ensure correct storage, labelling, and sanitation • Train staff on hygiene and safety protocols • Keep the kitchen inspection-ready at all times Systems, Costing & POS Control • Hands-on use of GAAP POS for menu setup, stock, and reporting • Maintain accurate recipe and portion costing • Monitor waste and variances • Support margin improvement through disciplined processes Team Leadership & Communication • Lead with clarity and calm authority • Coordinate with Front of House • Address performance issues promptly • Maintain a respectful, focused kitchen environment Required Experience & Skills • Kitchen supervisory experience • Strong process orientation • GAAP POS experience • Food costing and margin control knowledge • Excellent organisational and communication skills Personal Qualities Structured, disciplined, accountable, calm under pressure, and comfortable enforcing standards.
