About the Role
A renowned 5-star boutique hotel in Johannesburg is seeking an experienced Senior Sous Chef to lead their award-winning restaurant. The ideal candidate will be passionate about delivering exceptional fine-dining experiences, showcasing heritage-inspired cuisine and storytelling through food.
Key Responsibilities
- Assist the Head Chef with menu planning, seasonal dishes, tasting menus, and heritage-aligned cuisine
- Lead kitchen operations in the Head Chef’s absence and ensure consistent excellence
- Supervise food preparation, plating, service timing, and quality control
- Manage food costs, stock rotation, procurement, portion control, and wastage reduction
- Maintain hygiene, safety, kitchen organisation, equipment upkeep, and compliance with regulations
Requirements
- Recognised culinary qualification (Diploma or equivalent)
- 35 years relevant experience – must be in a fine-dining or luxury boutique hotel environment
- Excellent knowledge of food preparation, plating standards, international cuisine, and dietary considerations
- Strong leadership, training, and people management skills
- Able to remain calm and consistent in a fast-paced premium kitchen
Qualifications
- Recognised culinary qualification (Diploma or equivalent)
Salary & Benefits
R18,000 – R22,000 NEG, dependent on experience. Live-out role – JHB based candidate preferred.
