About the Role As Restaurant Manager, you will oversee all aspects of the hotel’s fine-dining dinner operations, from guest service and team performance to financial control and compliance. You’ll ensure that every service reflects the property’s high standards of quality, style, and sophistication, while fostering a motivated and well-trained team that delivers with confidence and warmth. Key Responsibilities Leadership & Operations Lead and coordinate the smooth and efficient running of the evening dining service. Oversee all front-of-house operations, including staff scheduling, floor management, and guest flow. Ensure alignment with overall Food & Beverage goals and maintain seamless collaboration with kitchen and support teams. Manage daily operations with a strong presence on the floor, ensuring every guest interaction reflects excellence. Guest Experience Champion world-class service and attention to detail that exceeds guest expectations. Respond promptly and professionally to guest feedback, inquiries, and special requests. Monitor guest satisfaction trends and implement continuous improvements in service delivery. Create a dining environment that feels both luxurious and welcoming. Financial Performance & Controls Drive restaurant profitability through effective cost control, upselling, and strategic revenue management. Oversee inventory, stock, and operating equipment control — ensuring accurate records and minimal wastage. Manage and reconcile payments, staff costs, and operational budgets in line with financial targets. People & Team Management Recruit, train, and inspire the restaurant team to deliver outstanding service. Provide ongoing coaching, mentorship, and performance feedback to foster professional growth. Ensure rosters, payroll submissions, and leave schedules are managed accurately. Uphold professional conduct and ensure adherence to company values and disciplinary standards. Compliance & Standards Maintain strict health, safety, and hygiene standards in line with legislation and company policies. Develop and uphold Standard Operating Procedures (SOPs) for all aspects of the restaurant. Ensure the dining room, service areas, and back-of-house spaces remain immaculate and service-ready. Innovation & Industry Awareness Stay informed on fine-dining trends, guest expectations, and service innovations. Collaborate with senior management to introduce enhancements that elevate the overall experience. Qualifications & Experience Diploma or qualification in Hospitality Management (advantageous). Minimum 2–3 years’ experience in a restaurant management role, preferably within a luxury or fine-dining hotel environment. Strong operational understanding of food and beverage management systems (Micros Simphony, Opera, Dineplan). Skills & Attributes Proven ability to lead, motivate, and inspire a team. Deep understanding of fine-dining service etiquette and guest psychology. Excellent communication, problem-solving, and organizational skills.
