Job Summary
Kendrick Recruitment is now seeking a passionate and experienced Sous Chef to join a renowned luxury property group based in the KNP area. This is a superb opportunity for a talented chef who is dedicated to culinary excellence and looking to take the next step in their career within a five-star bush environment.
Key Outputs:
-
Maintain kitchen hygiene standards as per company guidelines
-
Train chefs and implement kitchen operational standards
-
Continuously assess and identify areas for improvement in Food and Beverage operations
-
Ensure adherence to the set menu and styling guide approved by the food division
-
Collaborate with the Executive/Head Chef on Chef Academy training goals
-
Stay up to date with current culinary trends relevant to the brand
-
Deliver creative and visually appealing bush banqueting experiences
-
Maintain proactive communication with chefs, HODs, Lodge Manager, and suppliers
-
Enforce effective stock control and stock rotation systems
-
Assist with management of food orders, storerooms, and refrigeration
-
Ensure all food served meets the highest quality and presentation standards
Qualifications / Skills Required:
-
Comprehensive knowledge of cooking methods, ingredients, and procedures
-
Computer literate, with sound proficiency in Word and Excel
-
Familiarity with industry best practices and HACCP standards (FIFO, etc.)
-
Ability to follow and execute instructions from senior leadership
-
Excellent time management and decision-making skills
-
Creative and detail-oriented approach to food preparation
-
Strong understanding of dietary requirements
-
Capable of working under pressure in a professional manner
-
Skilled across all kitchen sections, including pastry, hot and cold
-
Proven ability to mentor, train, and lead junior staff
-
Valid South African drivers licence

Experience Required:

Minimum of 4+ years experience as a Sous Chef in a five-star lodge or hotel environment
-
Demonstrable experience with costing, menu planning, and stock control
-
Formal culinary qualification essential
