Job Summary
Kendrick Recruitment is currently seeking an experienced and passionate Wine Steward to join a luxury 5-star safari lodge in the iconic Kruger National Park. This role offers a fantastic opportunity for a wine enthusiast to contribute to an exceptional guest experience, providing a high-quality wine service within a prestigious hospitality environment.
Key Responsibilities:

Liaise with the Head Chef and Food and Beverage Management regularly to match weekly wines with food specials and menus
-
Conduct regular spot checks throughout all outlets and wine cellars to ensure effective stock control
-
Shadow bartenders during shifts to maintain quality control and service standards
-
Ensure effective internal communication with all departments for the seamless operation of the wine service cycle, from purchase to service and sales
-
Continuously update the wine list, replacing out-of-stock wines and communicating any changes accordingly
-
Manage all wine and liquor requisitions, ensuring proper documentation and signatures
-
Upsell and maximise sales revenue through intensive staff training
-
Ensure accurate end-of-day procedures, including guest settlements, voids, and adjustments
-
Maintain the highest standard of beverage service to guests, enhancing the lodges reputation
-
Advise guests on wine pairings and conduct tastings as needed
-
Report guest feedback to outlet managers and collaborate on improvements
-
Schedule and facilitate weekly training sessions for service staff
-
Assist in planning and developing future beverage-related events
-
Attend daily outlet briefings and debriefings with Food & Beverage Management
-
Collaborate with managers on the development of the wine list and cocktail menu
-
Implement seasonal changes to the wine offering in collaboration with the Head Chef and Food & Beverage Management
-
Ensure all mise-en-place is completed for smooth service operations
-
Monitor and control beverage stock, par levels, and product condition to minimise wastage
-
Form and maintain strong relationships with suppliers to obtain the best products and pricing
-
Conduct monthly inventories of wine and beverages in all outlets, ensuring accuracy and efficient stock control

Maintain all beverage operating equipment in a clean and good repair state
-
Work closely with the Storeman to minimise breakages and maintain stock integrity
Education and Experience:
-
Diploma in Hotel Management, Beverage Management, or related fields
-
WSET Level 1 or 2 certification preferred
-
A minimum of 3 years experience in a similar Wine Steward role in a luxury 5-star environment

Proven experience in a luxury accommodation setting
