About the Role
We are seeking an experienced and innovative Head Chef to join our team at a prestigious Country Club in Johannesburg. The ideal candidate will be responsible for leading our culinary department, developing menus, and ensuring exceptional service delivery to our members and guests.
Key Responsibilities
- LONG TERM PLANNING, POLICIES AND PROCEDURES: Develop strategic plans for the department, assessing performance, trends, projected growth, and submitting ideas on culinary requirements.
- CULINARY RESPONSIBILITIES: Establish menus for all outlets, including restaurants, functions, and events, and special menus that meet quality and returns standards.
- CLIENT SERVICE AND SATISFACTION: Interpret specific culinary requirements for all outlets, evaluating departmental performance post-functions or events to determine strength and weaknesses of service delivery.
- OPTIMAL MANGEMENT OF HUMAN RESOURCES: Agree performance objectives with kitchen staff, providing ongoing coaching, assistance, and corrective action as needed.
- QUALITY MANAGEMENT: Ensure policies and procedures are enforced on hygiene quality, health and safety standards, and general operational aspects.
- GENERAL ADMINISTRATION: Prepare annual budgets for the culinary department, monitoring expenditure against agreed budget and establishing accurate selling prices based on recipe costings.
- TECHNOLOGY MANAGEMENT: Stay up-to-date with technological advancements in the Culinary field, assessing their relevance to the Club’s needs.
Requirements
- Minimum Matric/Grade 12 Certificate in Hospitality Industry
- Tertiary Qualification in Hospitality Industry
- At least 5 years of experience in the Hospitality Industry
- Minimum 3 years of experience as Head Chef in a high-volume hospitality environment
- Experience in Upmarket Dining, Banqueting, and Casual Dining
Qualifications
- Formal Education/Certifications (if applicable)
