Duties & Responsibilities

Pastry & Dessert Production
-
Prepare, cook, and present high-quality pastries, desserts, breads, cakes, and plated sweets according to 5-star standards.
-
Assist with menu planning and contribute creative ideas for seasonal dessert offerings.
-
Ensure consistent portion control, taste, and presentation.
-

Kitchen Operations
-
Maintain cleanliness and organisation of the pastry section, complying with hygiene and food safety standards.
-
Monitor stock levels, place requisitions, and control wastage.
-
Ensure mise en place is prepared and ready for service.
-

Teamwork & Support
-
Work closely with the Executive Chef, Sous Chef, and other CDPs to ensure smooth service.
-
Train and guide junior staff or trainees in pastry techniques and kitchen etiquette.
-
Assist other kitchen sections when required.

Quality & Standards
-
Uphold the hotels reputation for fine dining and luxury guest experiences.
-
Ensure compliance with HACCP and hotel food safety policies.
-
Handle guest dietary requirements (e.g., gluten-free, vegan, sugar-free desserts) with care and precision.

Qualifications & Experience
-
Education & Training
-
Professional culinary qualification with a focus on pastry/baking (e.g., City & Guilds, Cordon Bleu, or equivalent).
-
Additional pastry-specific courses/certifications are advantageous.
-

Experience
-
Minimum 23 years experience in a pastry role within a fine dining restaurant, luxury hotel, or 5-star lodge.
-
Experience in creating high-end plated desserts, breads, pastries, and afternoon tea selections.
-
Knowledge of modern pastry trends and techniques.

Skills
-
Strong pastry and baking skills, with an eye for detail and presentation.
-
Ability to work under pressure in a busy kitchen environment.

Good communication and teamwork skills.
-
Knowledge of food safety, storage, and HACCP compliance.
