About the Role
We are seeking a highly skilled and experienced Sous Chef to join our team at an ultra-fine dining restaurant in Franschhoek. With a passion for international cuisine and a focus on sophistication, we are looking for a creative and culinary focused individual to take on production and service duties as part of our small brigade of 11 chefs.
Key Responsibilities
- Prepare high-quality dishes within tight deadlines
- Maintain a clean and organized kitchen environment
- Lead by example and support the team in achieving fine dining standards
- Monitor food costs, manage stock levels, and enforce quality control processes
- Develop and implement new menu ideas and recipes
Requirements
- Formal cheffing qualification with at least 5 years fine dining experience
- Exposure to international fine dining/culinary competitions is essential
- Demonstrated strengths in food costing, stock controls, managing staff, quality control, and enforcing consistency and fine dining standards
Qualifications
- Completed formal cheffing qualification
