Sushi Chef Luxury Wine Estate | Stellenbosch
Kendrick Recruitment is seeking an experienced and skilled Sushi Chef to join a prestigious luxury wine estate in Stellenbosch. This role offers the opportunity to work closely with the Head Chef to deliver exceptional Japanese cuisine and contribute to the estates reputation as a top dining destination.
Key Responsibilities:

Create and prepare a diverse sushi menu featuring various main ingredients and raw fish, including salmon, tuna, and unagi
-
Prepare appetizers, soups, and salads in line with Japanese culinary philosophy

Lead and manage kitchen staff in the Head Chefs absence
-
Coordinate with service staff to ensure accurate preparation, considering special requests and dietary requirements

Provide guidance and training to junior kitchen staff in line cooking, food preparation, and dish presentation
-
Supervise all food preparation and presentation to maintain quality and restaurant standards
-
Oversee and organise kitchen stock and ingredients, ensuring proper dating and quality control
-
Manage waste reduction and contribute to budgetary efficiency

Support the Head Chef in maintaining kitchen organisation, staff training, and operational standards

Monitor and enforce hygiene, health, and safety standards within the kitchen
Requirements:
-
Matric; Culinary Diploma preferred

Approximately 4 years experience in a senior chef role, preferably as a Sushi Chef or within an Asian restaurant

Strong knowledge of sushi types and rolling techniques

Leadership and management skills with the ability to work in a team
-
Ability to work accurately and efficiently under pressure

Creative problem-solving and attention to detail

Exceptional customer service and communication skills

Basic computer skills (Word, Excel, Outlook)

Own transport and valid drivers licence

Availability to work within operational hours, including evenings, weekends, and public holidays
