About the Role

Luxury Wellness Retreat & Hotel in Franschhoek is seeking a skilled and passionate Chef de Partie to join our team. We are looking for an experienced chef who can produce delicious, healthy meals centered around seasonal vegetables, with protein as a side, using fresh ingredients from our onsite garden. The ideal candidate will have excellent communication skills, be able to work well under pressure, and maintain a calm presence.

Key Responsibilities

  • Ensure all necessary stocks are on hand at the right quality and quantity
  • Ensure all stocks are kept under optimum conditions
  • Ensure detailed daily prep list is written and discussed with fellow chefs and seniors
  • Ensure all Mise-en-place is always freshly prepared and on time
  • Take care of daily food preparation and duties assigned by superiors
  • Ensure all dishes are prepared to the correct recipe and quantity
  • Ensure all recipes being used are up-to-date
  • Ensure that all dishes reach the pass correctly garnished, portioned, tasted, and flavored
  • Ensure that your section is always kept clean and tidy and follow a strict cleaning roster
  • Communicate any anticipated shortages promptly to the Sous chef or Head chef
  • Complete daily checklist first thing and communicate it to your direct senior
  • Check each dish leaving the kitchen for quality, quantity, presentation, and correct temperature
  • Record time sheets/attendance register/biometric system daily
  • Be flexible to assist in any section or kitchen as needed and instructed by the Executive Chef
  • Properly care for kitchen equipment

Requirements

  • Grade 12 Culinary qualification
  • At least 3 years’ experience in a similar position
  • Ability to provide top-notch customer service
  • Positive attitude and ability to work well under pressure with all culinary staff
  • Ability to do high-quality work while unsupervised
  • Able to work in a standing position for long periods of time
  • Able to safely lift and easily maneuver trays of food when necessary
  • Willing to follow instructions and ask questions for clarification if needed
