About the Role
We are seeking an experienced and skilled Head Chef to join our luxury safari lodge at Skukuza, Mpumalanga. As a key member of our culinary team, you will be responsible for delivering exceptional dining experiences that align with our lodge standards. Key Responsibilities
- Lead, train, and manage the kitchen team to deliver consistent, high-quality meals aligned with lodge standards
- Design and implement innovative, seasonal menus that reflect local culture and guest preferences
- Ensure strict portion control, presentation consistency, hygiene compliance, and adherence to dietary requirements
- Engage with guests to understand preferences and gather feedback, accommodating special dietary requests
- Monitor kitchen operations, stock management, wastage, cost control, and budget compliance
- Conduct quality checks on food taste, presentation, and service timeliness
- Implement staff development plans, conduct performance appraisals, and maintain professional standards
- Uphold health, safety, hygiene, and fire compliance, including HACCP protocols
- Promote sustainability initiatives, including local sourcing, waste management, and energy efficiency
- Collaborate with Front of House and lodge management to deliver a seamless guest experience
- Foster a positive team culture, encourage cross-department collaboration, and act as a role model in professionalism and guest engagement
Requirements
- Formal Chef qualification (Diploma or higher)
- Minimum 5 years’ experience in a Head Chef role, preferably in a luxury lodge or fine-dining environment
- Advanced culinary knowledge including international cuisine, fine dining, and dietary requirements
- Proven experience in menu design, kitchen operations, and team leadership
Qualifications
- Formal education/certifications (Bachelor’s, LLB, Matric, etc.)
Salary & Benefits
