About the Role

We are seeking a skilled Pastry Chef to lead our luxury safari lodge’s pastry department in Skukuza, Kruger region. The successful candidate will be responsible for designing and executing seasonal pastry menus, managing daily production, and maintaining high standards of luxury hospitality.

Key Responsibilities

  • Design and execute seasonal pastry menus, including plated desserts for fine dining, afternoon tea spreads, and specialized bush-dinner treats.
  • Oversee the daily production of all breads, pastries, cakes, and desserts, ensuring consistent quality and artistic presentation.
  • Manage the pastry kitchens’ daily operations, including stock control, ingredient sourcing, and waste reduction.
  • Mentor and train junior pastry staff, fostering a culture of excellence, precision, and continuous learning.
  • Maintain rigorous food safety and hygiene standards (HACCP) within the pastry section at all times.
  • Cater to diverse dietary requirements and create bespoke celebratory cakes or amenities for high-profile guests.

Requirements

  • A professional Culinary Arts or Pastry Diploma from a recognized international or national culinary institution.
  • A minimum of 5 years of experience in a pastry kitchen, with at least 2 years in a senior role within a 5-star hotel or luxury lodge environment.
