The role requires excellent culinary skills, leadership, and the ability to maintain high standards in a dynamic lodge environment. Key Responsibilities: Ensure all stocks are kept under optimum conditions. Prepare mise-en-place freshly and on time. Cook dishes according to recipes, portion sizes, and quality standards. Ensure dishes reach the hot plate or pass correctly garnished and presented. Maintain a clean and organised section at all times. Provide training, guidance, and support to junior cooks and trainees. Communicate any anticipated shortages promptly to the Sous Chef or Head Chef. Maintain discipline in the section, treating all staff fairly and courteously. Deputise in the Sous Chefs absence and take charge of the kitchen when required. Attend training courses and seminars as needed.
