About the Role
Kendrick Recruitment is recruiting an exceptional Head Sous Chef for a highly regarded luxury boutique hotel in the Zululand region. This is a senior kitchen role suited to a strong all-rounder with refined fine-dining experience, excellent leadership ability, and a consistent, detail-driven approach to food standards and service delivery.
Key Responsibilities
• Support the Head Chef in overseeing daily kitchen operations and service flow
• Lead the kitchen in the Head Chef’s absence, ensuring consistent fine-dining standards
• Maintain high-level quality control on taste, presentation, and plating across all services
• Assist with menu planning, daily specials, and seasonal innovation
• Manage stock control, ordering, portion control, and wastage reduction
• Ensure strict hygiene, health, and safety compliance (HACCP principles advantageous)
• Train, mentor, and supervise kitchen staff, maintaining discipline and teamwork
• Manage dietary requirements and allergy procedures confidently and professionally
• Assist with stocktakes, reporting, and kitchen administration as required
Requirements
Proven Head Sous Chef or Senior Sous Chef experience essential. Exceptional fine-dining background, within luxury boutique hotels. Strong all-round culinary ability with a consistent, calm leadership style. Excellent organisation, attention to detail, and ability to work under pressure. Strong communication skills and ability to work closely with FOH and management.
Salary & Benefits
Salary: R18,000 – R20,000 (negotiable depending on experience). Single Live-in accommodation provided. Opportunity to work in a high-end, detail-driven boutique hospitality environment
