About the Role
Join our intimate 5* safari lodge atmosphere and take on the role of Junior Sous Chef, where you’ll have the opportunity to learn all there is to know about fine dining and contribute to delivering exceptional culinary experiences.
Key Responsibilities
- Takes care of daily preparations (duties and food prep) as assigned by superiors, to the quality expected of a fine dining establishment
- Co-ordinates daily with management for scheduled tasks and outcomes
- Ensures that all food is being prepared to the highest standards
- Ensures efficient work with the focus on completing the task within the time available and to the standard set
- Assisting with Stock control and month end procedures – basic understanding of food cost
- Knowledge of hygiene and sanitation regulations that need to be followed
- Ensures equipment is used correctly and maintained properly
- Supervises Commis chefs and Scullers
- Encourages a positive atmosphere with great communication skills, with supervised staff and management
- Confident to create and implement new menu items – follow through in introduction, preparation and execution
Requirements
- 2-3 Years previous experience in a 4/5star environment as senior CDP/Sous
- Food Hygiene or professional cooking qualifications (Essential)
- Passion for food and personal growth – up to date with culinary trends
- Great team player, flexible and hard working
- Strong personality that can think on their feet and make a plan attitude
- Knowledgeable of all dietary and religious requirements
- Attention to detail, highly organized and can work under pressure
- Positive attitude with good leadership skills
- Self-motivated with great work ethic, leading by example
Qualifications
- Formal education/certifications (if applicable)
Salary & Benefits
- R12 000 – R 14 000 CTC D.O.E
