? ?? ??????????? ??????????? is recruiting on behalf of a world-renowned, conservation-driven luxury safari company for an experienced and passionate ?????? ???? ???? Our client is one of Africas most celebrated luxury safari and conservation brands, operating a collection of extraordinary lodges in some of the continents most iconic wilderness areas, including the Sabi Sand Game Reserve in South Africa. Committed to the preservation of Africas wildlife and wild lands, they deliver exceptional guest experiences underpinned by world-class food, seamless service, and an unwavering dedication to quality. Reporting to the Head Chef, the Senior Sous Chef will take full operational responsibility for the kitchen in the Head Chefs absence, ensuring all food production consistently reflects the lodges exceptional culinary standards. The role encompasses managing kitchen sections and staff canteens, menu design and implementation, quality control, stock and order management, and ensuring all health and safety protocols are maintained to the highest standard. The successful candidate will also actively contribute to the lodges sustainability objectives and support the development and multi-skilling of kitchen staff. ???????????? Minimum 45 years of cooking experience in a medium to large kitchen within a luxury lodge, 5-star hotel, or similar high-end hospitality environment. Proven ability to manage and lead kitchen staff, with a sound understanding of labour legislation and a passion for staff development and multi-skilling. Strong and wide-ranging food knowledge, with the ability to design, implement, and evolve menus in line with a premium food concept. Solid understanding of kitchen procedures, timing requirements, and the ability to plan and coordinate service effectively. Sound knowledge of health, safety, and hygiene protocols, including cleaning methods, allergen awareness, and the use of firefighting equipment. Experience with pastry, including breads, croissants, Danish pastries, ice-creams, sorbets, cakes, and desserts will be advantageous. Demonstrated ability to manage stock, control wastage through portion control and stock rotation, and administer orders to minimise shortages. A commitment to environmental sustainability and a willingness to actively contribute to the lodges conservation and greening initiatives. Strong communication skills and the ability to work collaboratively across departments to ensure seamless guest experiences. South African citizenship or a valid work permit essential.
