Head Sous Chef | Luxury Hotel | Ballito
Salary: Negotiable DOE | Live-out
A luxury hotel in Ballito is seeking a skilled Head Sous Chef to support the Executive Chef in managing the kitchen brigade and ensuring the delivery of high-quality cuisine across all food outlets. This role requires strong leadership, operational expertise, and a passion for consistent culinary excellence.
Key Responsibilities

Assist the Executive Chef in daily kitchen operations and team management

Lead, train, and mentor junior chefs and kitchen staff

Supervise food preparation, cooking, and presentation across all kitchen sections

Ensure strict adherence to hygiene, food safety, and quality standards

Assist in menu planning, recipe development, and cost control measures

Monitor stock levels, ordering, and inventory management
-
Support banquet, buffet, and la carte service operations
-
Ensure smooth kitchen workflow and timely service delivery
Minimum Requirements
-
Culinary Arts qualification or equivalent professional certification
-
35 years experience in a sous chef or similar leadership role within luxury hotel or upscale hospitality environments

Strong knowledge of food preparation, techniques, and kitchen operations
-
Experience managing multi-outlet kitchen operations an advantage
-
Excellent leadership, communication, and organizational skills
-
Ability to work under pressure and maintain high standards consistently

Flexible and willing to work evenings, weekends, and public holidays
