About the Role
We are seeking an Executive Chef with commercial acumen and culinary expertise to lead our two high-volume four-star hotels in Cape Town’s most sought-after precincts. As a dynamic leader, you will be responsible for elevating the guest experience while maintaining tight control over costs, systems, and standards.
Key Responsibilities
- Oversee all food production across restaurants, conferencing, and room service, ensuring consistency, innovation, and exceptional quality.
- Develop and implement menu engineering strategies, including seasonal development and promotional food plans.
- Manage full kitchen financial management, including menu planning, stock control, waste management, and achieving food cost targets through disciplined procurement and controls.
- Maintain hygiene and food safety compliance with structured systems in place to maintain impeccable standards.
- Train, mentor, and inspire a large brigade, manage performance, handle IR matters confidently, and create a culture of accountability and pride in delivery.
- Provide strong leadership capability, including emotional intelligence, professional presence, and the ability to remain composed under pressure.
Requirements
- Grade 12 Recognised Culinary Qualification
- Minimum 5 years’ experience within a four or five-star hotel environment as Executive Chef or Senior Sous Chef
Qualifications
- Formal education/certifications (e.g., National Diploma in Hospitality Management, Bachelors degree in Food and Beverage Management)
