About the Role
We are seeking an exceptional Executive Chef to lead our culinary vision at a luxury 5* Game Lodge in the Kalahari, Northern Cape. As part of our team, you will be responsible for creating epic gastronomic experiences under African skies that showcase local produce and seasonal ingredients.
Key Responsibilities
- Curate epic, story-driven gastronomic experiences under African skies
- Create menus inspired by local produce and seasonal ingredients including fire, flavour, texture, and theatre in the wild
- Create a culinary identity rooted in sustainability and place
- Engineer menus strategically to reduce wastage
- Improve margins while elevating the guest experience
- Build a disciplined, inspired culinary team
Requirements
- Grade 12
- Formal culinary degree or diploma
- At least 5 years’ experience in a 5* environment
- Proven fine-dining leadership experience
- Strong remote or lodge kitchen production background
- Exceptional food cost control & gross profit management
- Wastage reduction strategies and stock optimisation
