About the Role

Join our team as a Junior Sous Chef at our intimate 5* safari lodge in the Greater Kruger Area, where you’ll have the opportunity to learn and grow in a fine dining environment.

Key Responsibilities

Takes care of daily preparations (duties and food prep) as assigned by superiors, to the quality expected of a fine dining establishment
Co-ordinates daily with management for scheduled tasks and outcomes
Ensure that all food is being prepared to the highest standards
Ensure efficient work with the focus on completing the task within the time available and to the standard set
Assisting with Stock control and month end procedures – basic understanding of food cost
Knowledge of hygiene and sanitation regulations that need to be followed
Ensure equipment is used correctly and maintained properly
Supervises Commis chefs and Scullers
Encourages a positive atmosphere with great communication skills, with supervised staff and management
Confident to create and implement new menu items – follow through in introduction, preparation and execution

Requirements

2-3 Years previous experience in a 4/5star environment as senior CDP/Sous (Essential)
Food Hygiene or professional cooking qualifications (Essential)
Passion for food and personal growth – up to date with culinary trends
Great team player, flexible and hard working
Strong personality that can think on their feet and ‘make a plan’ attitude
Knowledgeable of all dietary and religious requirements
Attention to detail, highly organized and can work under pressure
Positive attitude with good leadership skills
Self-motivated with great work ethic, leading by example
