About the Role

Join our team as a Junior Sous Chef at our intimate 5* safari lodge in the Greater Kruger Area, where you’ll have the opportunity to learn and grow in a fine dining environment.

Key Responsibilities

  • Takes care of daily preparations (duties and food prep) as assigned by superiors, to the quality expected of a fine dining establishment
  • Co-ordinates daily with management for scheduled tasks and outcomes
  • Ensure that all food is being prepared to the highest standards
  • Ensure efficient work with the focus on completing the task within the time available and to the standard set
  • Assisting with Stock control and month end procedures – basic understanding of food cost
  • Knowledge of hygiene and sanitation regulations that need to be followed
  • Ensure equipment is used correctly and maintained properly
  • Supervises Commis chefs and Scullers
  • Encourages a positive atmosphere with great communication skills, with supervised staff and management
  • Confident to create and implement new menu items – follow through in introduction, preparation and execution

Requirements

  • 2-3 Years previous experience in a 4/5star environment as senior CDP/Sous (Essential)
  • Food Hygiene or professional cooking qualifications (Essential)
  • Passion for food and personal growth – up to date with culinary trends
  • Great team player, flexible and hard working
  • Strong personality that can think on their feet and ‘make a plan’ attitude
  • Knowledgeable of all dietary and religious requirements
  • Attention to detail, highly organized and can work under pressure
  • Positive attitude with good leadership skills
  • Self-motivated with great work ethic, leading by example
