is assisting a luxury safari lodge in the Okavango Delta in Botswana recruit an experienced and creative The Pastry Head Chef will take full responsibility for the pastry kitchen, ensuring the highest standards of quality, creativity, and presentation across all pastry offerings. Working closely with the Executive Chef and wider kitchen team, the role focuses on delivering memorable culinary experiences that align with the lodge’s food philosophy and luxury guest expectations. This position requires a hands-on leader who can manage daily kitchen operations, oversee menu development, maintain strict hygiene and safety standards, and mentor the pastry team while operating efficiently within budget parameters. Key Responsibilities · Manage and oversee the pastry kitchen operations, ensuring food quality meets luxury lodge standards. · Design and develop creative pastry menus aligned with the lodge’s culinary concept. · Prepare and supervise the production of a variety of pastry items including breads, croissants, pastries, desserts, ice creams, sorbets, cakes, and biscuits. · Maintain the highest standards of food hygiene, safety, and kitchen cleanliness. · Monitor food costs, control stock levels, and minimise wastage through effective ordering and stock rotation. · Lead, train, and mentor the pastry team, supporting skills development and succession planning. · Ensure all kitchen equipment is maintained and handled correctly to minimise damage and loss. · Collaborate with other departments to ensure exceptional guest dining experiences.
