About the Role
As a Senior Chef de Partie at Bright Placements, you will be responsible for managing and overseeing a section in the kitchen while assisting in overall kitchen operation. You will utilize exceptional culinary skills to prepare high-quality food, presentation, cooking, and maintain kitchen standards, ensuring a dining experience that meets the Grootbos kitchen standard.
Key Responsibilities
- Run and oversee specific sections in the kitchen (Larder, Veg, Grill, Pastry, Pass)
- Ensure all dishes are prepared to the highest standard within timeframes
- Maintain consistency in taste, portion size, and presentation
- Adapt meals for special dietary requirements and guest preference
- Prepare mise-en-place freshly and on time
- Cook dishes according to menus, recipes, and guest preference
- Assist in creating new recipes and menu items based on seasonal availability and what is available from the farm and locally
- Enforce food and hygiene, health, and safety standards in the kitchen
- Monitor stock levels for sections and minimize food waste
- Order, receive, store, and rotate kitchen supplies efficiently
- Work under the guidance of senior chefs to improve skills and techniques
Requirements
- Former culinary qualification with at least 5 years of professional kitchen experience or relevant experience in a professional kitchen environment
- Previous experience as a Chef de Partie, preferably in a lodge, hotel, or fine dining environment
- Expertise in managing a specific section with minimal supervision (Larder, Veg, Grille, Pastry, Pass)
- Strong knowledge of food preparation and techniques
- Strong leadership, communication, problem-solving skills
- Ability to work independently and under pressure
- Passion for cooking
