About the Role
A luxury game lodge in the Eastern Cape is seeking an experienced and hands-on Sous Chef to support the Head Chef in all aspects of kitchen operations. This senior kitchen role requires strong leadership, operational consistency, and a passion for delivering exceptional culinary experiences in a lodge environment. The successful candidate will play a key role in maintaining food quality, kitchen standards, staff development, and smooth day-to-day operations.
Key Responsibilities
- Assist the Head Chef in overseeing all daily kitchen operations
- Lead kitchen operations in the Head Chef’s absence
- Ensure consistent food quality, presentation, and portion control
- Supervise, train, and mentor junior kitchen staff
- Assist with menu development, costing, and stock control
- Manage inventory, ordering, and waste control
- Ensure strict adherence to HACCP, hygiene, and safety standards
- Prepare and cook dishes to high culinary standards across hot and pastry sections
- Work closely with other departments to ensure seamless guest dining experiences
Requirements
- Minimum 5 years’ experience in a professional fine-dining kitchen
- Previous luxury lodge experience is mandatory
- Proven leadership experience within a kitchen team
- Strong cooking ability across hot and pastry sections
- Solid understanding of stock control, costing, and kitchen administration
- Knowledge of dietary, cultural, and religious requirements
- Ability to work under pressure in a fast-paced environment
- Willingness to work flexible hours and rotational shifts
- Valid driver’s licence
