Education & Training Professional culinary qualification with a focus on pastry/baking (e.g., City & Guilds, Cordon Bleu, or equivalent). Additional pastry-specific courses/certifications are advantageous. Experience Minimum 23 years experience in a pastry role within a fine dining restaurant, luxury hotel, or 5-star lodge. Experience in creating high-end plated desserts, breads, pastries, and afternoon tea selections. Knowledge of modern pastry trends and techniques. Skills Strong pastry and baking skills, with an eye for detail and presentation. Ability to work under pressure in a busy kitchen environment. Good communication and teamwork skills. Knowledge of food safety, storage, and HACCP compliance. Personal Attributes Creativity and passion for pastry arts. High levels of discipline, reliability, and self-motivation.
