About the Role
We are seeking an exceptional Chef De Cuisine to join our Italian restaurant at a Five Star Hotel in Abu Dhabi, UAE. As a key member of our culinary team, you will be responsible for creating bold yet refined flavors using simple techniques, while also championing our farm-to-table program and sourcing the best seasonal ingredients from local suppliers and farms.
Key Responsibilities
- Manage kitchen operations to ensure efficient service delivery
- Create menus that showcase modern techniques, sustainability practices, and evolving culinary trends
- Source and purchase high-quality ingredients from local markets at least twice weekly
- Lead a team of chefs and support staff, providing guidance and mentorship as needed
- Maintain accurate records of inventory, waste, and menu costs
- Collaborate with the hotel’s purchasing team to source seasonal ingredients
- Implement sustainable practices in the kitchen, including reducing food waste and minimizing environmental impact
Requirements
- Minimum 2 years’ experience in Italian cuisine
- Exceptional palate with ability to create bold yet refined flavors using simple techniques
- Knowledge of wine pairing principles and flavor compatibility
- Up-to-date with modern culinary trends: sustainability, fermentation, plant-forward cuisine, and healthy cooking
- Proven leadership, communication, and mentoring skills
- Warm, approachable personality with a natural inclination for guest interaction
Qualifications
- Formal education in Culinary Arts or related field (e.g., degree, diploma, certification)
Salary & Benefits
The salary range for this position is AED 4,000 per annum, which includes a yearly ticket allowance. The successful candidate will also receive a one-bedroomed apartment.
