Sous Chef – 5* Luxury Game Lodge – Eastern Cape, South Africa Salary Package R20;000 (Negotiable DOE) Live-in position Role Overview A luxury game lodge in the Eastern Cape is seeking an experienced and hands-on Sous Chef to support the Head Chef in all aspects of kitchen operations. This is a senior kitchen role requiring strong leadership, operational consistency, and a passion for delivering exceptional culinary experiences in a lodge environment. The successful candidate will play a key role in maintaining food quality, kitchen standards, staff development, and smooth day-to-day operations. Key Responsibilities Assist the Head Chef in overseeing all daily kitchen operations Lead kitchen operations in the Head Chefs absence Ensure consistent food quality, presentation, and portion control Supervise; train, and mentor junior kitchen staff Assist with menu development, costing, and stock control Manage inventory, ordering, and waste control Ensure strict adherence to HACCP, hygiene, and safety standards Prepare and cook dishes to high culinary standards across hot and pastry sections Work closely with other departments to ensure seamless guest dining experiences Minimum Requirements (Essential) Minimum 5 years experience in a professional fine-dining kitchen Previous luxury lodge experience is mandatory Proven leadership experience within a kitchen team Strong cooking ability across hot and pastry sections Solid understanding of stock control, costing, and kitchen administration Knowledge of dietary, cultural, and religious requirements Ability to work under pressure in a fast-paced environment Willingness to work flexible hours and rotational shifts Valid drivers licence Advantageous Strong understanding of current food and wine trends Experience with seasonal, locally inspired menus High level of organisation and time management ?
