About the Role
Karen Tupper Recruitment is seeking an experienced and driven Executive Sous Chef to join its senior kitchen management team at a well-established four-star hotel in Cape Town. The ideal candidate will play a key leadership role in a high-quality hospitality environment known for excellent service and dining standards.
Key Responsibilities
- Assist the Executive Chef in managing all kitchen operations
- Oversee food preparation, cooking, and presentation to ensure high standards are maintained
- Supervise, train, and motivate kitchen staff across all sections
- Ensure consistency in quality, portion control, and presentation
- Assist with menu planning, costing, and stock control
- Maintain strict adherence to food safety, hygiene, and health regulations
- Manage kitchen operations during service and large functions
- Monitor food costs, waste control, and stock rotation
- Ensure smooth communication between kitchen and other departments
Requirements
- SA Citizen
- Matric / Grade 12 qualification
- Minimum of 4–5 years’ experience in a busy 4- or 5-star hotel establishment
- Proven experience in a senior kitchen role, as a Sous Chef or Executive Sous Chef
- Strong leadership, organisational, and communication skills
- Excellent culinary knowledge and attention to detail
- Experience in banqueting and high-volume service environments
- Ability to perform under pressure and meet operational deadlines
