About the Role
We are seeking an experienced and visionary Food & Beverage Director to lead our ultra-luxurious 5* hotel in Cape Town. As a key member of our management team, you will be responsible for delivering exceptional guest experiences across all F&B outlets, driving organizational profitability, and fostering a culture of excellence within your team.
Key Responsibilities
- Plan and forecast revenues and costs for the department
- Staff and schedule associates, allocating duties to maximize productivity and minimize payroll costs
- Create a work environment that promotes high employee morale, continuous learning & development, and utilizes feedback from Employee Satisfaction Surveys
- Develop systems and procedures for higher cost efficiency and guest satisfaction
- Recruit, manage, and appraise associates in the department
- Develop and implement the annual plan, linking departmental objectives to the hotel’s overall strategy
- Lead associates to ensure maximum productivity and oversee outlet managers and supervisors
- Monitor daily activities of all F&B outlets, including banquets, and work with chefs on menu planning & design
- Conduct regular meetings with outlet managers and supervisors, monitor guest concerns, compliments, and suggestions
- Organize food festivals and develop guest loyalty and retention programs
- Compile and review monthly profit and loss statements for various outlets and assist in implementing approved budgets
- Ensure operational standards are followed for equipment and processes
- Maximize F&B profitability through cost containment strategies
- Prepare promotion and marketing/PR plans for various outlets and execute them
- Conduct refresher-training programs for associates and guide new members of the department
- Maintain regular contacts with corporate and individual customers, building strong relationships with them
- Stay informed about local, national, and international best practices/trends in food service, interior design, technology, and entertainment in F&B
- Develop departmental trainers in association with the training department and oversee all training activities within the department
- Ensure procurement of high-quality raw materials and cost-effective equipment
- Adhere to TPAM requirements, ensuring associates are trained and aware of regulations
- Perform audits to ensure LQA and Richey Standards are consistently followed and maintain positive audit results
- Update and complete KRAs, identifying new ones and allocating them to associates
- Address grievance and counselling issues among department associates
- Ensure a safe working environment, anticipating possible hazards and conditions
Requirements
- Graduates from reputed hotel management schools (desirable)
- Graduates with experience in hotels or hospitality sector (5-6 years in similar position) (desirable)
- Fluency in English; additional language skills advantageous
- Knowledge of other hotel services and Food & Beverage services, including cuisines, menus, accompaniments, wines, beers, spirits, cocktails, tobacco, teas, coffees, other non-alcoholic beverages
