Job Description

A well-established four-star hotel located in Cape Town is seeking an experienced and driven Executive Sous Chef to join its senior kitchen management team. This is an exciting opportunity for a passionate culinary professional to play a key leadership role in a high-quality hospitality environment known for excellent service and dining standards. Role Overview The Executive Sous Chef will support the Executive Chef in overseeing all kitchen operations, ensuring consistent food quality, efficient service delivery, and adherence to the hotel’s culinary standards. This role requires strong leadership, organisational skills, and a hands-on approach to kitchen management across restaurant, banqueting, and event operations. Key Responsibilities: Assist the Executive Chef in managing all kitchen operations Oversee food preparation, cooking, and presentation to ensure high standards are maintained Supervise, train, and motivate kitchen staff across all sections Ensure consistency in quality, portion control, and presentation Assist with menu planning, costing, and stock control Maintain strict adherence to food safety, hygiene, and health regulations Manage kitchen operations during service and large functions Monitor food costs, waste control, and stock rotation Ensure smooth communication between kitchen and other departments Candidate Requirement: SA Citizen Matric / Grade 12 qualification Minimum of 4–5 years’ experience in a busy 4- or 5-star hotel establishment Proven experience in a senior kitchen role, as a Sous Chef or Executive Sous Chef Strong leadership, organisational, and communication skills Excellent culinary knowledge and attention to detail Experience in banqueting and high-volume service environments Ability to perform under pressure and meet operational deadlines Flexibility to work shifts, weekends, and public holidays Relevant culinary qualifications will be an advantage
