About the Role
Corecruitment is seeking an experienced Senior Sous Chef to support the Head Chef in leading daily kitchen operations at a luxury Safari Lodge in the Eastern Cape. The successful candidate will ensure exceptional food quality, maintain high presentation standards, and deliver a personalised guest dining experience in line with 5-star hospitality expectations.
Key Responsibilities
- Oversee daily kitchen operations and run shifts
- Ensure food quality, consistency, and presentation standards are maintained
- Manage dietary requirements and guest requests professionally
- Enforce food safety, hygiene, and health & safety regulations
- Assist with stock control, ordering, food costing, and wastage management
- Train, mentor, and motivate junior kitchen staff
- Maintain strong communication with front-of-house teams
Requirements
- Diploma or formal qualification in Culinary Arts
- Minimum 5 years’ experience in a senior culinary role within a 5-star lodge or hospitality environment
- Proven experience managing and leading a kitchen brigade
- Excellent spoken and written English
- Knowledge of food costing, stock control, and kitchen administration
- Working knowledge of GAAP POS and Microsoft Office
- Sound understanding of Food & Beverage service principles

- Valid driver’s license
